Delicious Blueberry Orange Pancakes

Method

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.

  2. In a separate bowl, whisk together the milk, egg, melted butter, vanilla, orange zest, and orange juice.

  3. Pour the wet ingredients into the dry ingredients and gently mix until just combined. Do not overmix.

  4. Gently fold in the blueberries.

  5. Heat a lightly buttered or oiled pan over medium heat. Pour about ¼ cup of batter into the pan for each pancake.

  6. Cook for 2–3 minutes, until bubbles form on the surface and the edges begin to set. Flip and cook for another 1–2 minutes until golden brown.

  7. Serve warm with maple syrup, fresh blueberries, and a little extra orange zest.

If using frozen blueberries, add them straight to the batter without thawing them to prevent the pancakes from turning purple and watery. For a stronger orange flavour, add an extra ½ teaspoon of orange zest rather than more juice. The zest gives you a much more concentrated citrus flavour without making the batter too thin.
