A creamy, comforting pumpkin soup made with tender pumpkin, aromatic garlic and onion, warming spices, and a touch of cream. Perfect for a cozy lunch or dinner.
Heat the butter or olive oil in a large pot over medium heat.
Add the onion and carrot and cook for 5 minutes until softened.
Add the garlic and cook for another 30 seconds.
Add the pumpkin, stock, nutmeg, black pepper, salt, and cinnamon.
Bring to a boil, then reduce the heat and simmer for 20 minutes, or until the pumpkin is very soft.
Use a blender or immersion blender to blend the soup until smooth.
Stir in the cream and heat gently for 2–3 minutes. Do not boil.
Taste and adjust the salt and pepper as needed.
Serve hot with fresh bread, croutons, or a drizzle of cream.
